When Life Gives You Lemons

Ginger Mint (Matcha) Lemonade

Lemons and summer go hand in hand. So when life gave us lemons, we have made lemonade about as many ways as we could possibly think of. This drink screams summer with the soothing aroma of mint which is easy to grow in small window pots or in a garden. The matcha gives your drink an added green glow which always makes me happy, and matcha contains l-theanine which can promote a relaxing, calming effect and is also touted to improve cognitive function. Ginger, with its anti-inflammatory properties, helps assist the immune system, and adds a nice, spicy kick to your lemonade. We can all benefit from any positive support available to us.

Fresh squeezed lemon juice mixed with your choice of sweetener and frozen in ice cube trays also makes a great addition to your summer iced teas. You can add sparkling water to your drink if you are the fizzy type. And, of course, you can also make your lemonade old school without mint, ginger or matcha, if you prefer. This drink can also be blended.

Ingredients:
makes one glass

1/3 cup fresh lemon juice
2 tsp sugar or sweetener of choice to taste
1/3 cup water
ice
3 fresh mint leaves
1 small chunk fresh ginger grated or pressed
1/4 tsp matcha powder (Mizuba Tea Company Daily Matcha is my favorite)

*truthfully, you can adjust any of the ingredients above to the flavor profile and intensity of your choice.

Recipe:

Mix fresh lemon juice with sweetener of your choice and add water. Grate ginger or use a press and press a small chunk of fresh ginger into the mix. Muddle mint leaves in the bottom of your glass or simply added as garnish. Blend or mix your ingredients and strain into a tall glass with ice. If adding matcha, whisk matcha with just a little water in a small bowl. Pour desired amount into the glass of lemonade. Relax, refresh, refill.
