Shake and Baked Tofu

 

Shake up your notion of shrink wrapped, store bought, tamari drenched, baked tofu. In our current recipe, you can loosen up, get creative, and let your taste buds take the lead. We offer you some basic instincts to start your tofu marinade and encourage you to take off from there. Just as we try to inspire you to get in touch with your intuitive yoga practice, we want to offer you good foundational tools, and then help you learn to trust what evolves.

We like to start with an organic, firm style tofu. The marinade, which only takes a few minutes to create, doesn't need to sit and soak in. This dish can go right into the oven and be ready to eat in thirty to forty-five minutes. There are basic ingredients that we like to use religiously, but even those don't have to be written in stone.

Ingredients like nutritional yeast flakes, olive oil, Braggs aminos, and lemon juice are standards for us that go way back in our recipe files, but we tend to take it up several notches from there. Adding different spices, the addition of onions, garlic, and mushrooms, or ginger and sesame are just a few possibilities. Think about serving our shake and baked tofu with  broccoli, asparagus, steamed greens, or sweet and sour cabbage, along with wild or brown rice, or potatoes.

Basic Ingredients
olive oil
Braggs liquid aminos or tamari
fresh lemon juice
nutritional yeast flakes


Recipe
Preheat oven to 375 degrees. Begin to build marinade in your baking dish. Add olive oil, Braggs or tamari, fresh lemon juice and nutritional yeast flakes and shake the dish back and forth to blend the liquid, or whisk ingredients in the bottom of the dish. Press excess water out of tofu and slice into squares. Place in bottom of the dish and make prick marks with a fork to allow for a bit more saturation of the marinade. Flip tofu squares over and sprinkle once again with yeast flakes before placing in the oven. Bake for 30 minutes or longer if you prefer your baked tofu drier and crispier.

Additional Suggestions

for a tangy mustard forward version add any or some of the following to the basic version:
stone ground mustard
capers
white wine or vermouth
shallots, garlic, and or chopped onion
mushrooms

for a spicy version add any or some of the following to the basic marinade:
red chili flakes
chopped yellow pepper
a shot of hot sauce
Worcestershire sauce
fresh lime juice
tomato paste or organic ketchup

for an Asian influence add any of the following to the basic ingredients:
toasted sesame oil
grated ginger
sesame seeds
scallions
